Translated from Tamil, one of the Indian languages, karhi means thick soup or sauce. Most often it is a spicy vegetable stew. With the light hand of the British, the name "curry powder" has become entrenched in international cuisine for the mixture of spices used for its preparation, so that today the majority of Indian cuisine is strongly associated with this bright yellow seasoning. Apply curry powder in dry, fried or pasty form, adding it to dishes at the beginning or in the middle of cooking.
