Allspice is a spice with a pungent flavor and amazing aroma reminiscent of a mixture of black pepper, mustard, cloves, cinnamon and nutmeg. Allspice is the dried unripe fruit of an evergreen tropical tree. These fruits are berries: at first they are blue-green in color, after drying, rough brown peas are 2-3 times larger than those of black pepper. All kinds of dishes are seasoned with paprika: soups, meat, game, salads, and even desserts ( puddings, cookies, compotes). It goes well with fresh, canned vegetables and vegetable soups, spinach, fish, game sauces and jellies. Sauces flavored with allspice acquire a piquant aroma: sour cream with onions, with horseradish, with red wine, almond for fish, bechamel, etc. The spice in marinades is irreplaceable. Fish, berries (blueberries, lingonberries), vegetables (beets, cabbage, eggplants, onions, gherkins), mushrooms are marinated with it, pickles and marinades for barbecue, game are prepared. Allspice is slightly soluble in water and slowly gives off its aroma to liquid dishes, therefore, it should be laid at least half an hour before being cooked. Allspice not only gives aroma to dishes, but also changes their taste. At the same time, the taste of allspice is very hot, and this should be taken into account - add only a few grains to the dish. The peas can be broken down just before use.
